Chilli buttered sweetcorn
On its own, braaied sweetcorn is delicious, but add a hint of chilli and some fresh herbs from the garden and it turns into a feast.
4 sweetcorn cobs, husks removed
2 red or green chillies, seeded and finely chopped
¼ cup fresh parsley, chopped
¼ cup fresh coriander, chopped
1 clove garlic, minced
The grated rind of 1 lemon
Salt and pepper
Prepare the sweetcorn for the braai by cooking either for 10 minutes in boiling water or microwaving covered in plastic wrap for 3-5 minutes. Brush with olive oil and set aside for the braai.
For the butter, mix all the ingredients together and season with salt and pepper. Spoon onto plastic wrap and form a log by folding and twisting the two ends together. Refrigerate until ready to use.
Braai the sweetcorn until chargrilled, place on a serving dish and, while still warm, top with discs of chilli butter. Serve immediately
