Green Goddess Sauce

This sauce can be made using many different herbs, so use what you have. These are just guidelines.

  • 1/2 cup mayonnaise
  • 1/2 cup sour cream (or use natural yoghurt)
  • Zest from 1 lemon and 1 tablespoon lemon juice
  • 1 cup fresh parsley
  • 3/4 cup fresh basil
  • 1/4 cup fresh chives
  • 1 cup mixed soft leafy herbs like dill, mint, tarragon or coriander or a combination of these.
  • 1 teaspoon Worcestershire sauce
  • 1 clove garlic, grated
  • 1/4 teaspoon salt (adjust to your taste)
  • 1/4 teaspoon freshly ground black pepper Optional
  • 2 tablespoons capers
  • 2 anchovies

Mix all the leaves in a food processor and then add the other ingredients to blend well. Check the seasoning and adjust if needed. Serve or refrigerate until ready to use.
