Fig and onion jam crostini

With fresh figs in season at this time of the year, try the sweet and savoury option to get the best out of them and make jam with the rest.

Slice a French loaf and lightly toast on both sides. Spread a generous amount of cream cheese or ricotta on the toast and top with onion jam and fresh slices of fig. Sprinkle with fresh thyme to serve. You can make your own onion jam by slicing it finely and adding it to a pan with some butter. Cook down gently until very soft and jammy. The sweetness of the onions will be enough to make a good jam, but if you prefer extra sweetness, add a teaspoon or two of honey or sugar at the end of cooking.
