The Italian Garden Hot Dog
The classic combination of tomato and basil rocks this topping.
To make your Italian Garden Hot Dog
- 8 ripe cherry tomatoes, sliced
- Handful of fresh basil leaves
- Olive oil
- Salt and pepper
- Parmesan cheese, shaved
Make the mayonnaise and place in a squeezy bottle to serve. Add the tomato and a dash of olive oil to a bowl and season with salt and pepper. To assemble the Italian garden hot dog, place basil leaves on a toasted bun, add the grilled sausage, add a squiggle of aioli, top with tomato and then the shaved parmesan. Season with salt and pepper. Serves 4
Aioli mayonnaise with Dijon mustard
- 1 clove garlic, chopped
- 2 egg yolks
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- ½ cup light olive oil
- ½ cup sunflower oil
- 2 tablespoons hot water, if necessary
Blend the eggs, garlic, lemon juice and mustard in a food processor. Add the combined oils in a thin stream. If you’d like your aioli runnier, add a couple of tablespoons of hot water, then place the mayonnaise in a squeezy bottle for easy serving.
