Potato Salad on a Stick

Whether it’s a kebab, skewer or simply food on a stick, you will find the use of sharpened tools to cook with in almost every culture imaginable. In the Orient there is satay, in France there are brochettes, in Portugal espetadas and in South Africa sosaties, given to us by the Cape Malays. In this recipe we make delicious potato salad on a stick.

Whatever you want to call it, cooking on sticks over a fire gives food a great charred flavour and helps to keep little bits of food from falling into the coals.

What you need to make Potato Salad on a Stick

  • 500g baby potatoes
  • 1 packet streaky bacon
  • 1 red onion
  • 1/2 cup mayonnaise
  • Dash of Worcestershire sauce
  • Salt and pepper
  • Handful chives, chopped

Cut the red onion into quarters and place on a baking tray. Bake for 30 minutes until cooked through. Boil the potatoes in their skins in salted water until cooked through.

Cool and thread onto skewers, intertwining with bacon and roasted onion slices. Braai on the grill until the bacon is cooked and crispy. Mix together the mayonnaise, Worcestershire sauce, salt and pepper and chives and serve with the potato salad on a stick.
