
Mini Spare Ribs

Girls have decided that they too can fire up a braai and do some really good braaiing. In her book Girls on Fire, Camilla Comins does just that and adds her own special flair to the braai. The recipes are different, fun, sometimes healthy, and there is something for everyone, including the kids.

Mini Spare Ribs

These are one of my favourite things to give kids. There’s something so basic about chewing delicious roasted meat off the bone, and they take to it very happily.
Ingredients
2 racks of short ribs
Marinade
30ml soy sauce
45ml tomato sauce
15ml honey
30ml olive oil
3ml garlic
Salt and pepper
Serves 4 – 6
Method
Put the ribs in a shallow dish. Mix all the marinade ingredients together and pour it over the ribs. Marinate overnight in the fridge.
Well before braai time, you want to transfer the ribs to a roasting dish and cover it with tin foil. Preheat your oven to 180°C and pop the ribs in the oven for 45 minutes. Set them aside until you need them and finish over a medium fire by grilling for 15 minutes.
