Zigeuner Sauce
This versatile Zigeuner sauce can be served with just about anything to add a tang and a bit of spice. It’s also called Gypsy sauce and is of German and Hungarian origins. It’s almost like the German version of BBQ sauce.
Ingredients
1 x 400g can tinned tomatoes or 4 medium fresh tomatoes, skinned and chopped
2 onions, finely chopped
3 sweet peppers (any colours), seeds removed and finely chopped
2 garlic cloves, finely chopped
3 medium pickled dill gherkins, finely chopped
1 tablespoon tomato paste
½ cup vegetable or chicken stock
1 tablespoon gherkin juice
1 tablespoon ground paprika
1 teaspoon chilli powder (use less if this seems too much)
Pinch sugar
Salt and pepper
Splash olive oil
Method
Add the onions and peppers to a pan with the olive oil and sauté on a low heat until the onions are translucent. Add the rest of the ingredients and season with salt and pepper. Adjust the flavours with either more sugar or vinegar and cook for 10 minutes on low and serve.
