Loaded Guacamole

Fresh guacamole is a lovely dish to serve in the summer with some good dipping chips or crackers. What is even better is loading your guac with salty, crunchy toppings that add to the flavour and take a normal good guacamole to the next level.

Ingredients for the guacamole

  • 2 ripe avocadoes
  • 1 tablespoon fresh lemon juice
  • Dash of Tabasco hot sauce or use finely chopped fresh chillies
  • Salt and pepper

Toppings:

  • Handful pumpkin seeds, toasted in a pan with a little olive oil until they spit
  • A packet of bacon, chopped and fried off until crisp
  • A handful fresh coriander, chopped
  • 100g feta cheese, crumbled
  • Tortilla chips or savoury biscuits to serve

Method:

Make the guacamole by blending the avocado, lemon juice and hot sauce together. Season with salt and pepper and check the taste. Place in a bowl and throw on the toppings to serve.
