Pool Party Cocktails
In the summer time, when the weather is right, there’s nothing better than pool party cocktails! We have gathered 3 fabulous recipes for you – think iced tea, sangria and shots. Just sit back, sip, and soak up the sun.
Raspberry Iced Tea
A delicious refreshing drink for a hot summer’s day. This recipe makes about 4 litres and can also be frozen if there is any left over.
You’ll need:
5 cups water + 8 cups water
1 cup sugar
8 tea bags (just normal tea is fine or use Earl Grey or chamomile)
3 cups apple juice
Fresh raspberries
Ice cubes
How to make it:
In a saucepan bring 5 cups water to the boil and add the sugar. Stir until the sugar is dissolved and then stir in the tea bags. Set aside and let it steep for 5 minutes. Remove the teabags and add the apple juice and extra water. Place in the fridge to get very cold and serve with ice and raspberries.
Strawberry and Peach Sangria
For the more alcoholic punches, a sangria is refreshing and fruity. Hailing from Spain and Portugal, Sangria is traditionally made with wine, sugar, chopped fruits, sometimes another liqueur and soda. In fact, only those two countries can label it a sangria according to EU regulations. This refreshing sangria can be made with any type of wine from red, white to rosé and any type of fruit you like.
You’ll need:
3 tablespoons sugar
3 tablespoons brandy
1 cup strawberries, sliced
1 cup peaches, sliced
A few lemon slices
1 bottle dry white wine (or any wine you prefer)
1 cup sparkling water
Basil leaves to serve
Ice to serve
How to make it:
In a large bowl or jug mix the sugar and brandy together until the sugar has dissolved. Add the fruits, then the wine and water. Refrigerate for a few hours before serving with ice and basil leaves.
Cherry Shots
For the brave, these sweet-with-a-punch shots will make the party – and they can be made in advance.
You’ll need:
1 packet jelly powder (10g cherry or strawberry flavour)
1 cup boiling water
1 cup cherry liqueur like cherry kirsch or use vodka or gin
Fresh cherries or maraschino cherries with stalks
Shot glasses – small ones about 20
How to make it:
Add the boiling water to the jelly powder, and stir until dissolved. Add the cherry liqueur and stir well. Add a cherry to each glass and top up with the liquid. Set in the fridge and serve.
