
Pork with Mango Salsa



The tastes of summer are evident in this recipe for pork ribs pared with mango salsa. The combination of pork and mango is a classic taste explosion that is a must for a sunny afternoon next to the grill with good company and a good food. The freshness of the mango and tomatoes, with a kick of heat from a chilli, complements the rich gooeyness of perfectly cooked BBQ ribs.

What you will need:
- 2 racks pork ribs
- 1 mango, chopped
- A handful cherry tomatoes, halved
- ½ cucumber, chopped
- ¼ red onion, finely chopped
- Handful fresh coriander and mint, chopped
- 1 chilli, seeded and finely chopped
- Salt and pepper
Dressing:
- 1 tablespoon apple cider vinegar
- 1 tablespoon olive oil
- 1 teaspoon honey
Keep all the salsa ingredients around the same size when chopping them. Mix all the ingredients for the dressing and pour over the salsa. Combine carefully so that the fresh ingredients are still intact, and allow to sit for half an hour to blend all the flavours before serving. Heat the grill and cook the ribs for about half an hour. Brush with marinade as you go, turning occasionally.
