
Prawn Burgers


How to make the Battered Prawns for the prawn burgers
- 12 large prawns, cleaned and peeled
- Oil for frying
- 6 small hamburger buns
- Lettuce, tomato and avocado to serve
- Limes or lemons to serve
For the batter
- ½ cup oil
- 1 egg, beaten
- 1 cup self-raising flour
- ½ cup milk
- Salt and pepper
- Oil for frying
Mix the oil and the egg together until well combined. Add the flour and milk and season with salt and pepper. Mix well to form a batter. Place some oil in a saucepan on the grill and heat up until spluttering. Dip the prawns into the batter and cook in hot oil for a few minutes on each side. Serves 4 – 6. Assemble the prawn burgers by placing lettuce, tomato and avocado on the base of a bun. Top with battered prawns and spoon over lashings of tartar sauce. Grill half limes or lemons on the grill to serve with the burgers.
Tartar sauce
Homemade is much better than the bottled version, and it’s very easy to make.
- ½ cup mayonnaise (make your own or use the pre-made versions)
- 3 tablespoons dill gherkins, very finely chopped
- 1 tablespoon capers, very finely chopped
- 1 tablespoon lemon juice
- 1 teaspoon fresh or freeze-dried dill
- 1 teaspoon Worcestershire sauce
- ½ teaspoon Dijon mustard
- Salt and pepper
Mix all the ingredients together and serve over the battered prawns.
