Punchy Mediterranean Veggies

You can never go wrong with a good potato bake. However, if you’re looking for something a little different (and slightly healthier), these smoky Mediterranean veggies should do the trick. No matter the season, they make for a hearty braai dish.

What you need:

  • 1 large zucchini
  • 2 medium carrots
  • 3 medium potatoes
  • 1 large red onion
  • 12 garlic cloves
  • 8 sticks fresh thyme
  • 1 teaspoon paprika
  • 2 tablespoons fresh oregano
  • Salt and pepper

What to do:

Cut the vegetables into chunks – cut the harder veggies like the carrots and potatoes smaller than the softer veggies so the cooking time is the same. Place in a bowl and drizzle with olive oil. Mix the paprika, oregano, salt and pepper separately in a small bowl and spread over the vegetables. Toss until evenly coated. Spread the vegetables out onto four pieces of aluminium foil and evenly place three pieces of garlic and two sprigs of thyme on each. Wrap the foil tightly and leave to cook on the braai for 25 – 30 minutes until the veggies are soft.

Serves 4.
