
Grapefruit, strawberry and mint granita
Summer isn’t complete without ice cream. This dessert is synonymous with the season, refreshment and the outdoors. Making it is a different story all together. Luckily, ice cream’s healthier and simpler cousin, granita, is just as refreshing and delicious.
Using fresh produce from your garden, this recipe screams ‘summer!’ without the extra hassle.
Ingredients
- 2 cups freshly squeezed grapefruit juice, with the pulp (around 3 grapefruits)
- 1 cup strawberries
- 1 cup water
- 1/3 cup granulated sugar
- Handful of mint, chopped
Instructions to make granita
Remove the stems from the strawberries and blend in a food processor to make strawberry pulp. In a large bowl, combine the grapefruit juice and pulp, strawberry pulp, water and sugar, and whisk until the sugar has dissolved. Stir in the chopped mint. Pour into a dish and place in the freezer until solid, which should take around 3 – 4 hours. When ready to serve, scrape with a fork to form small ice fragments. Place in a glass and serve immediately.
