Green Tomato Sauce
If you grow your own tomatoes, you might find yourself needing to use up your harvest. What if they aren’t all red? Well, you could try making your own fried green tomatoes, otherwise we have a quick and easy recipe that will end up giving you a creamy but perfectly tart sauce to make any burger that much more delicious!
Ingredients:
- 6 medium green (or barely ripe) tomatoes, quartered
- 1 small onion, peeled and quartered
- 2 stalks rosemary
- 125 ml dry white wine
- 250 ml chicken or vegetable stock
- 250 ml cream
- 200g butter
- Salt and pepper
Method
In a saucepan, place tomatoes, onion, wine, chicken stock and rosemary. Simmer for about half an hour until the tomatoes and onions are soft. Add the cream and reduce the sauce by half. Remove the rosemary and use a stick blender to blend the sauce until smooth. Add the butter in a bit at a time and continue blending until thick and glossy.
