Noodles with bok choy
These noodles are a delicious blend of seafood, chicken, mushrooms, vegetables and Asian flavourings. This dish a hearty, healthy meal, and a great way to make use of your vegetables.
Ingredients:
- 2 shallots or 1 small onion, sliced
- 2 chicken breasts, cut into strips
- 1 cup shitake mushrooms, sliced
- ½ cup shimeji mushrooms (optional)
- 2 bok choys, cut into pieces
- ½ red pepper, sliced
- 1 cup prawns
- 400g fresh noodles
- 1 litre fresh chicken stock
- 2 tablespoons oyster sauce
- 2 tablespoons black bean sauce
- 1 tablespoon light soy sauce
Method:
Quickly stir-fry all the ingredients, starting with the onion and moving down the list to the prawns. Make sure not to overcook. Add the sauces and chicken stock and taste before serving on top of the noodles. Serves 4.
