Cheesy Spinach Chilli Bites



Make your own baby spinach chilli bites and add a glorious melted mozzarella centre. This decadent treat is a perfect starter when entertaining guests.
You will need:
- 4 green chillies, chopped
- 1 onion, chopped
- 2 teaspoons coriander seeds
- ½ teaspoon ground cumin
- 1 teaspoon salt
- 1 teaspoon paprika
- 1 x 400g tin chickpeas, drained and rinsed
- 1 potato, grated
- 2 tablespoons flour
- 1 teaspoon baking powder
- 1 egg
- Handful coriander, roughly chopped
- 2 spring onions, chopped
- 2 handfuls baby spinach leaves
- 250g mozzarella, cut into 1cm batons
- Extra flour and egg
- Vegetable oil for frying
Method:
- In a food processor pulse together the chillies, onion, coriander seeds, cumin, salt and paprika.
- Add chickpeas and blend into a paste. Place this mixture into a bowl and add potato, flour, baking powder, egg, coriander, spring onions and baby spinach leaves, and mix well.
- Dip the mozzarella batons into egg and flour and then into the batter, making sure they are covered well before dropping into hot oil to fry until crisp.
- Serve immediately just as they are, or dipped into a sour cream and mustard sauce.
