Chilli Kale Stir Fry



Make kale the star of your next vegetable side dish with this quick, flavourful stir-fry. It is simple to prepare, packed with nutrients, and works just as well alongside meat as it does in a vegetarian meal.
Ingredients
- 1 bunch kale, stems removed and leaves thinly sliced
- 1 onion, finely chopped
- 2 to 3 chillies, chopped (adjust to taste)
- 1 to 2 tablespoons olive oil
- Salt and black pepper, to taste
Method
- Prepare all your ingredients before you begin cooking.
- Heat the olive oil in a large pan or wok over medium heat. Add the chopped onion and sauté until soft and translucent.
- Stir in the chillies and thyme, cooking for another minute until fragrant. Add the sliced kale and toss well to coat in the oil and aromatics.
- Cook for 3 to 5 minutes, stirring occasionally, until the kale is wilted but still vibrant. Season with salt and black pepper to taste.
- Serve immediately as a side dish with grilled meat, or toss through pasta for a simple vegetarian meal.

Tips
- For extra flavour, add a squeeze of lemon juice just before serving.
- You can include garlic or a pinch of smoked paprika for a deeper taste.
- If the kale is tough, add a splash of water and cover briefly to help it soften.
