Chilli Kale Stir Fry

Make kale the star of your next vegetable side dish with this quick, flavourful stir-fry. It is simple to prepare, packed with nutrients, and works just as well alongside meat as it does in a vegetarian meal.

Ingredients

  • 1 bunch kale, stems removed and leaves thinly sliced
  • 1 onion, finely chopped
  • 2 to 3 chillies, chopped (adjust to taste)
  • 1 to 2 tablespoons olive oil
  • Salt and black pepper, to taste

Method

  • Prepare all your ingredients before you begin cooking.
  • Heat the olive oil in a large pan or wok over medium heat. Add the chopped onion and sauté until soft and translucent.
  • Stir in the chillies and thyme, cooking for another minute until fragrant. Add the sliced kale and toss well to coat in the oil and aromatics.
  • Cook for 3 to 5 minutes, stirring occasionally, until the kale is wilted but still vibrant. Season with salt and black pepper to taste.
  • Serve immediately as a side dish with grilled meat, or toss through pasta for a simple vegetarian meal.

Tips

  • For extra flavour, add a squeeze of lemon juice just before serving.
  • You can include garlic or a pinch of smoked paprika for a deeper taste.
  • If the kale is tough, add a splash of water and cover briefly to help it soften.
