
Homemade Hash Browns
A fondness for pre-made hash browns, fried until crispy and served with bacon, poached egg and lemony hollandaise sauce, prompted a number of trial recipes to try and create delicious homemade hash browns. The results are tremendous.

Try making these homemade hash browns for yourself.
- 4 – 6 potatoes
- 1/3 cup flour
- Salt and pepper
- Pinch cayenne pepper
- 1 teaspoon sugar
- 2 tablespoons milk powder
- 1 tablespoon melted butter
- 1 egg, beaten
- Vegetable oil for frying
Boil the potatoes in a pot of water until tender but still firm. Peel and chop into rough squares and add to a mixing bowl. Add flour and milk powder, season with salt, pepper and cayenne pepper. Beat egg with melted butter and add. Mix with a spoon but not too much, so that it still has texture. Place baking paper on a tray and add the mixture. Spread it out and score cut marks for each square. Freeze until solid. Break into sections and pack in a bag and keep frozen. Heat vegetable oil in a pan and cook the hash browns from frozen for 2 minutes on each side and drain on a grid. Cool and cook again for 1 minute to crisp.
Serve with 2 slices of bacon, a poached egg, hollandaise and chopped parsley.
