Lemon Pattypan Bread

Pattypans are not one of the first vegetables you think of including in a dessert. They are mostly used in savoury dishes, served with other veggies and meat. But did you know that they actually pair really well with lemon and make the most deliciously moist bread?

Ingredients

  • 1 cup grated pattypans
  • 2 cups self-raising flour
  • 2 eggs 250g sugar (11/3 cups)
  • ½ cup oil ½ cup buttermilk
  • Zest of 2 lemons
  • 2 tablespoons lemon juice
  • Pinch salt

For the glaze

  • 1 cup icing sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon milk

Method

In a large mixing bowl start by beating the eggs and sugar until pale and lemon-coloured. Beating all the time, add the oil, buttermilk, zest and lemon juice and salt. Mix well before folding in the sifted flour and grated pattypans.

Pour into a greased and lined loaf tin and bake for 40 – 50 minutes at 180°C until the top is browned and the mixture is set. Allow to cool completely before adding the glaze. The glaze is simply a combination of the ingredients poured over the bread to serve.
