Mashed Potato Puffs
3 large potatoes (540g), mashed with skin (2 cups)
3 large eggs, beaten
180g reduced-fat feta cheese, crumbled
1 cup lentils, cooked
125g spinach, finely chopped using herb scissors
¼ cup chives, chopped
Salt and pepper to season
1 teaspoon nutmeg
Parmesan cheese, finely grated for garnishing
In a large mixing bowl, combine the mashed potatoes, eggs, feta, lentils, spinach and chives. Season with salt, pepper and nutmeg. Using silicon spray, grease a 12-cup muffin tray and mound a spoonful of the potato mixture into each cup. Bake for 30 – 35 minutes at 190°C or until golden brown. Cool for 5 minutes before garnishing with a light grating of Parmesan cheese. Serves 12.
