Stuffed Sweet Peppers
This quick and easy recipe will provide you with the perfect appetizer at your next family meal or a tasty side to compliment a roast or at a braai.
You will need:
2 red, yellow or orange sweet peppers
½ onion, chopped
1 clove garlic, sliced
150g mushrooms, chopped
4 slices ham, chopped
100g feta
Handful thyme leaves
Olive oil
Salt and pepper
4 slices French loaf or 2 slices regular bread, cut into cubes
Cut the peppers in half and scoop out the seeds and the membrane. Place the half peppers in a dish, cut side up, and add a little water to the dish. Cover with plastic wrap and microwave on high heat for 5 minutes. Add the onion to a pan with a little olive oil and sauté on low heat until the onions are soft. Add the garlic, mushrooms and ham and cook down until all the liquid from the mushrooms has dried up. Mix in the feta and thyme and season with salt and pepper. Stuff the mixture into the pepper halves and bake in a hot oven for 10 minutes. Heat a little olive oil in a pan, add the bread and toss. Cook until golden, making sure to keep an eye on it as it browns quickly. Serve the peppers with the croutons and a few sprouts as an accompaniment or as a starter for 4.
