Watermelon and Herb Salad
Watermelon and herbs make the idea complement to any summer braai. The freshness of the herbs combined with the juiciness of the melon is irresistible. This simple and quick-to-make recipe will brighten up any summer braai table. Serves 4-6 people

Ingredients
90 g rocket
60 g basil
40 g mint
600 g watermelon
150 g plain feta cheese
1 small red onion
Sprig rosemary
300 ml balsamic vinegar
Knob of butter
For the salad
Toss together the rocket, basil and mint leaves, then lay them in your salad dish. Cube the watermelon (removing as many seeds as possible) and the feta and place it on top of the leaves. Finish by sprinkling with thinly sliced red onion and drizzle with your dressing.
For the dressing
Place a small saucepan over a medium heat on your re, place the sprig of rosemary in the pan and pour over the balsamic vinegar. Bring to a gentle simmer and reduce by half, stirring occasionally. Once reduced, remove the rosemary and add the butter, stirring it in to create a glossy sauce.
