Chop chicken, celery (1 or 2 stalks) and half an apple into small cubes, mix in 4 tablespoons of plain yoghurt, 2 tablespoons of mild wholegrain mustard, finely chopped parsley, dill or chives, and salt and pepper. Put the filling in a separate tub and wrap a bread or pita separately so that the kids can assemble it when they are hungry.
No-mess savoury muffins provide tasty treats throughout the day, or they can be eaten with a ready-made bean or lentil salad with added avocado for lunch. Ideal herbs for savoury muffins are thyme, dill, parsley or chives. Include spinach in the muffins and the kids will never pick up the herbs.
Gluten intolerance? Frittata is the perfect solution. Fry cubed potatoes, bacon and onions until soft, then pour in 6 lightly beaten eggs and 1 tablespoon of chopped parsley. Cook for five minutes until the eggs become firm, then move it to under the grill for a further five minutes. It is delicious eaten cold, the way the Spaniards do it.
