3-Ingredient Banana Pancakes
Any Jack Johnson fan will dream of making banana pancakes and singing along to his tune on a Sunday morning. Luckily, they’re even easier to make than regular pancakes! This banana pancake recipe (closer to crumpets in South African terms) makes 8 small pancakes and can be easily topped with any of the classic flavourings – chocolate chips, syrup, or fresh fruit – for a light, healthy breakfast.
For Your Banana Pancakes You will need:
- 1 banana
- 2 eggs
- 1 tablespoon self-raising flour
Method:
Mash the banana and add any additional flavourings. Beat the eggs lightly and stir them into the banana (mix in a food processor for a more combined mixture). Whisk in the flour and mix until combined. Heat a pan over medium heat and add a little oil or butter. Drop about 2 tablespoons of batter into the pan and flip after the bottom starts to brown (about 1 minute). Serve with your favourite toppings.
