Lovage and Potato Soup

Lovage is a lesser-known and underrated Mediterranean herb. It is an indispensable culinary herb that adds depth to slow-cooked food. Add lovage to soups, meaty stews, fish or chicken dishes. You can also use it when making vegetable stock. Only use small amounts because of the strong flavour. The addition of lovage lifts this simple potato soup to a whole new level.

Ingredients

1 tablespoon butter
1 onion, chopped
750 g potatoes (about 5-6 medium), peeled and cubed
750 ml vegetable or chicken stock
500 ml milk
½ cup frozen peas
1 small lettuce, shredded
1 handful lovage leaves
Salt and pepper

Method

Melt the butter in a saucepan and add the onion, heating until soft. Add the potatoes and stock and simmer until the potatoes are soft. Add the lovage, keeping some back for garnish. Blend the soup until smooth and creamy and then add the milk. In the saucepan wilt the lettuce and then add the peas, pour over the soup, and heat gently without boiling. Season with salt and pepper and garnish with lovage leaves
